My daughter had a couple of friends over this afternoon and it's hot here, so we set up the baby pool and let them all splash around. I knew we'd need a snack and I like to serve stuff that I know the kids will enjoy but also that I feel good about serving. So I decided to try out these watermelon popsicles. They are so easy and so yummy! The kids had a great time biting off the heads and arms of these little guys. This is not really a recipe; rather, a fun summer snack idea.
Ingredients
Watermelon
Popsicle sticks
Cookie cutter shapes
Slice a watermelon into a large slice, at least one inch thick. Use the cookie cutters to make shapes and then gently insert the popsicle sticks into the watermelon pieces. Do this carefully as it's easy for them to pop out the back. Place the popsicles on wax paper, cover them with plastic wrap and freeze for at least a few hours. When you are ready to eat, take them out and enjoy!
