Fresh Fruit Stuffed with Ricotta Cheese 

 

This is so easy to prepare and kids can make the whole thing --- even the littlest ones! It's a a perfect dish to make in a classroom for snack time. 

 

Ingredients

2 Fresh apricots (or peaches, pears, bananas)

1/2 cup ricotta cheese

Cinnamon

Fresh mint

 

Mix half a cup of ricotta cheese with a generous dash of cinnamon. Mix thoroughly, until smooth. Halve the fruit (or slice the bananas) and spoon the ricotta dip into the fruit. Garnish with fresh mint, if available.
