Cherry tomato season is just starting and I can't stop buying these little bites of summer! Here's a great way to bring out the sweetness even more and celebrate summer. 

 

Ingredients

1 1/2 pints of cherry tomatoes

1 onion, cut into chuks

2T olive oil

1 clove garlic, crushed

Fresh basil leaves (dried if fresh unavailable)

3T goat cheese (can use another kind of cheese, or leave vegan)

salt + pepper, to taste

 

Slice 1 1/2 pints of cherry tomatoes into halves. Roast the cherry tomatoes, and an onion, cut into chunks, with some olive oil, garlic and salt in the oven (375) for 35-45 minutes. Roasting brings out the natural sweetness of the veggies. Blend (I used an immersion blender). Add a few leaves of fresh basil and 3T goat cheese. Blend. Add salt to taste. (you can keep this vegan or add another kind of cheese). It makes about 2 1/2 cups of sauce. I served this over pastsa, but it would also be tasty over bread, rice or even fish. Fresh and delicious!
