Popeye's Popouts

I like to make a giant pot of brown rice (or quinoa) every Sunday night, so I have it for the week. This week, I used it for stir fry one night, made rice balls for snacks for the kids and added it to roasted veggie salads with feta cheese. I'm always looking for new ways to use it and create tasty and satisfying dishes for my family. And that is how Popeye's Popouts were born. And boy, are they good! 

 

The dish takes about 10 minutes to prepare and about 20 minutes to bake and can be made in one pan. 

 

Ingredients

3T olive oil

1 onion

2 cloves garlic, crushed

3c frozen spinach

1 cup cottage cheese (4% recommended)

1 1/2 cup cooked brown rice

2 eggs, beaten

salt + pepper

 

Saute onion and garlic in olive oil on medium heat for 5 minutes. Add 3 cups frozen spinach, salt and pepper and cook for 2 more minutes. Add 1 cup cottage cheese and turn off heat. Blend (I used an immersion blender). Add 1 1/2 cups cooked rice and 2 eggs, beaten.  Spoon into a mini-muffin pan and bake at 375 for 20-25 minutes.

 

Tip: use mini muffin liners for quick clean-up. 

Makes about 30 popouts.
