We went peach picking this weekend and, well, turns out, it doesn't take long to end up with pounds and pounds of peaches! The kids had a great time and since we got home, I've been trying to find ways to use up the peaches. Enter Homemade Peach Vanilla Fruit Leather. My kids love fruit leather and this version uses just a few real ingredients. It's super easy to make and the kids love it!

 

Ingredients

4 ripe peaches

1-2 T honey (less if your fruit is sweet; more if it isn't too sweet)

1/2 t cinnamon

1/2 t vanilla

 

Preheat your oven to 170 degrees and line a large baking sheet with parchment paper. Cut the peaches in half and remove the seeds. Chop the peaches loosely and add them to the blender. Add the remaining ingredients and blend very well. Pour the mixture on a parchment-lined baking tray. Spread the mixture evenly on the baking tray. Using a spoon or spatula, make sure that the edges are not too thin; if necessary, push the edges in a bit, towards the center. Bake for about 6 hours. It may be a bit quicker or take a bit longer, depending on how thin or thick your mixture is. If necessary, check it every 30 minutes as you get close to the 6 hour mark and if you need to keep cooking it. You'll know it's ready when you can touch it and it isn't sticky*. Once it's ready, take it out and let it cool very well. This can take a few hours. You can then cut it with scissors or a knife and roll it up.  Make sure to pull back the parchment paper before you take a bite! Store in a sealed container.
