If we are being honest here, I'm a good cook but a lazy cook. I like to use as few pots as possible, and when I read a recipe, I immediately think about both how long will it take me to cook, as well as how long will it take me to clean up. This dish took me 20 minutes to prepare and, though it needs more than one pot, clean up was really really easy. Honestly. And the best part - my family gobbled it up. I hope yours does as well!

 

Mexican Vegetable Lasagne

 

8 corn tortillas, cut into quarters (Tip: a pizza slicer makes this job easy!)

1 large sweet potato (about 2 1/2 cups), diced very small*

2 cups black beans, drained

1 can diced no-salt added tomatoes

1 teaspoon cumin

1/4 cup fresh cilantro, roughly chopped

1 teaspoon salt

2 1/2 cups grated cheese (you can always add more, if you want)

1 avocado, sliced

 

Turn the over to 375 degrees. While it's heating up, cut the corn tortillas and place them on a parchment-lined baking tray. Then, mix together the diced sweet potato, black beans, diced tomato, cumin, cilantro and salt in a large bowl. Once the oven is hot, bake the corn tortillas for 7 minutes, flip them over and bake for another 3 minutes. Remove and let them cool slightly. Turn oven down to 350 degrees. 

 

Oil a lasagne pan. Place half of the baked corn tortillas on the bottom of the pan. Spoon half of the black bean sweet potato mixture on top. Then layer on one cup of grated cheese and half a sliced avocado. Top with the remaining corn tortillas, black bean sweet potato mixture and cheese. Cover with aluminum foil and bake at 350 degrees for 40 minutes.  Take the cover off and bake for 10-15 more minutes. Add remaining sliced avocado before you serve it. 

 

Serve with sour cream, salsa, more avocado and extra grated cheese, if you want. 

 

* The sweet potato has to be diced very small in order for it to cook thoroughly, otherwise it will not cook completely. Alternatively, can you dice and roast the sweet potato separately and then add it to the black beans, but, as mentioned above, I like quick and easy, so I use this short cut.
