    Oatmeal Fruit Bars 

    I love oats - they are so versatile, affordable and filling. They are also easy to cook with and pretty hassle-free. For a recent trip, I wanted something tasty and satifying to bring on a plane for me and the kiddos. I whipped up these Oatmeal Fruit Bars in no time and threw the rest in the freezer for another day. They can be vegan and are gluten-free with no added sugar! Oh and these are a one bowl recipe - my favorite kind! 

     

    Ingredients (Makes about 15 bars)

    3 ripe bananas

    1/3 cup apple sauce (no sugar added)

    2 cups oats (not steel cut or quick oats)

    1/4 cup almond milk or whole milk

    1/2 cup raisins (you can also mix in some chocolate chips)

    2 Tablespoons nut butter (I used Sunflower Seed butter so they kids could have them at school; any nut butter would work here)

    1 teaspoon vanilla extract

    1 teaspoon cinnamon

    Pinch of salt

     

    Directions

    1. Heat oven to 350 degrees. 

    2. Mash 3 ripe bananas in a bowl. When well mashed, stir in the remaining ingredients in order.

    3. Grease a 9x9 inch pan. Pour in mixture and bake for 20 minutes. Cool and cut into bars.
