
These little Eggplant Pizza Bites swayed my eggplant-wary six year old. She ate five. They are great for those nights when the kids are hungry and dinner isn't ready - just throw them on the table and let the little hands dig in. Of course, they are also fantastic served as part of a dinner. Or when you are hosting a sleepover. Or for snack time. You get the idea. While they take about an hour to prepare, they really only neeed 10 minutes of active prep time.
Eggplant Pizza Bites
Ingredients
1 eggplant, sliced thinly (about 1/2 inch thick)
Olive oil
Bread crumbs (or Panko)
Grated parmesan
Garlic powder
Tomato sauce
Mozzarella cheese
Salt
(Additional toppings are encouraged: sliced olives, mushrooms, capers etc).
Heat oven to 425. Slice the eggplant. Lay the slices on parchment paper on a baking tray. Brush each slice, on one side, with olive oil. Sprinkle some bread crumbs and parmesan cheese on each slice. Add some garlic powder and salt. Bake for 25 minutes. Flip the slices over and repeat the process. Brush with olive oil, sprinke on bread crumbs, parmesan cheese, garlic powder and salt. Bake for 25 minutes. Add a small spoonful of tomato sauce and a sprinkle of grated mozzarella cheese. Bake for 5 minutes. Serve and enjoy!
