When I was a kid and my mom made chocolate pudding (well, any pudding) for dinner, I always wanted it for breakfast the next morning. Finally, a chocolate pudding I really can eat for breakfast - and feel good about giving my kids!
Ingredients
2 ripe avocados
2 ripe bananas (ripe bananas are sweeter and since most of the sweetness is natural, you'll want to use ripe bananas here)
1/3 cup cocoa powder
1/3 cup maple syrup
1/3 cup milk (almond milk would work fine here, too)
2 Tablespoons vanilla extract
(Feel free to add a bit more maple syrup if the bananas haven't added enough sweetness)
Scoop the ripe flesh out of the avocado and add it to the blender. Add the bananas and blend well. Add the remaining ingredients and blend. Scrape down the blender a few times to make sure everything is well mixed.
(Note: you can also freeze these in popsicle molds and eat them as popsicles once frozen)
