Who doesn't love a popsicle on a hot day? In fact, ask a child, and you'll find they likely would love a popsicle on a cold day, too! This festive red white and blue layered popsicle has just a few ingredients, tastes great and is fun to make with, or without, the kiddos!
Use a fun mold or pop a stick in a Dixie cup and enjoy!
Ingredients (Makes 1 small popsicle, but you may need to adjust depending on your mold)
A handful of fresh raspberries (frozen but thawed ok)
A handful of fresh blueberries (frozen but thawed ok)
2 Tablespoons plain full-fat yogurt
1/4 cup Coconut Milk
3 T Coconut Water
Popsicle mold
Mash the raspberries in a small dish and place them in the end of your popsicle mold. Combine the yogurt with the coconut milk and add this layer next to the raspberry layer. Place the popsicle stick in the center of the popsicle mold (if necessary) and allow this to freeze for 30-45 minutes. While this is freezing, mash the blueberries in a bowl and add coconut water to this mixture. Pour the blueberry mixture into the top of the mold and allow to freeze for another 30-45 minutes.
